Nobody like an admin party right ? So when I modifiled the /opt/local/etc/couchdb/local.ini file and put in an admin user and password under the [admins] section and restart couch, bloody futon still doesnt accept my password.
Having a look at the /opt/local/etc/couchdb/local.ini file I notice the password is not hashed as I expect it to be. This was because this file was owned by root, once I changed the ownership to couchdb and restarted couch it worked as expected.
sudo chown -R couchdb:couchdb /opt/local/etc/couchdb/local.ini
